Tri-Tip
I am going to share with you, my recipe for World Famous Tri-Tip. Yes I said World Famous. It has traveled all the way to the Philippines from here in the USA. We have won 1st place with it in a BBQ Competition (a small competition with 10 teams)
Now this Recipe will not have our secret ingredients , but you can get the same results.
1 bag (18-20) lbs Tri-Tip
½ gallon Italian Salad dressing
1/3 cup Worcestershire sauce
1/3 cup Soy Sauce
4 Red Onions Cut up
¼ cup pappy's 50% sodium
¼ cup Chopped garlic
1 tbls Roasted Garlic
4 cans beer
1 ltr cold water
2 tbsp coarse black pepper
¼ cup dehydrated onions
Aluminum Foil.
Place all ingredients except Tri-Tip in a plastic container (you can add Tri-Tip If you want just get a big container), mix well and let set. 1-2 hours in frig.
Start your grill. If you are using wood (Oak and Lump Mesquite Charcoal). If using gas just get it nice and hot, hope you have some lava rock in the bottom to get some of the flavor back up to the meat.
Place Tri-Tip Fat side down to start the char. Watch out for flare ups with the fat. Brush with wet marinade that you made up. Sprinkle with Pappy's 50% Sodium from your bottle. Turn Tri-Tip over. Repeat with Marinade. I never poke the Tri-Tip to turn it, I use BBQ gloves to Handel the meat, once you poke it all the juice will leak out and you will have dry meat. Trust me I am a Pro at Tri-Tip. Every time you turn the Tri-Tip Brush it with the marinade. Don't continue to use the pappy's every time just 4 times in the beginning and once or twice in the end or it will be to salty. You will know your Tri-Tip is getting done just by the feel of the meat, hence that is why I use BBQ gloves. The meat will firm up nice and start to swell from the juice that is inside. Once it looks good Wrap in two layers of aluminum foil and a scoop of marinade. Place on low heat. After about 15-20 minutes turn over for a bit longer. Now this is the only time you will poke the meat. Using a instant read thermometer place it in the middle of the Tri-Tip. You are looking for about 135 degrees. Remove it from the grill and let it sit about 15-20 minutes to rest. Don't turn over, the juice will leak out. Open Foil and enjoy. Save the juice from the foil to pour over your Tri-Tip.
